My first idea is to make a Coconut Cake with Lemon Curd Filling. but came out with this. I do not have fresh sweetened coconut in my supplies so I decided to use praline and lemon curd was turned into lemon mousse. Making it not too sweet not to overpower the lemon. My mom loved it!
